- Oversee daily operations of all food and beverage outlets, including restaurants, bars, room service, and banqueting.- Ensure smooth coordination between kitchen, service, and bar departments for seamless guest experiences.- Monitor and maintain the highest standards of food quality, presentation, and service.- Develop and implement sales and promotional strategies to maximize revenue across F&B outlets.- Analyze business performance, prepare forecasts, and manage departmental budgets effectively.- Control food, beverage, and labor costs through efficient procurement and waste management.- Ensure exceptional guest satisfaction through attentive service, quality food offerings, and prompt resolution of complaints.- Regularly interact with guests to gather feedback and improve service delivery.- Uphold the Mayflower Hotels brand image by maintaining consistent hospitality standards.- Lead, motivate, and manage the F&B team, including supervisors, service staff, and bartenders.- Conduct regular training sessions on customer service, hygiene, and product knowledge.- Plan staff schedules to ensure optimal coverage during peak and off-peak hours.- Collaborate with the Executive Chef and culinary team to design and update menus in line with seasonal trends and guest preferences.- Introduce innovative dining concepts and signature events to enhance the hotels F&B reputation- Ensure compliance with all food safety, hygiene, and health regulations.- Conduct regular inspections to maintain cleanliness, sanitation, and safety standards in all F&B areas.- Implement and monitor Standard Operating Procedures (SOPs) for quality assurance.- Prepare monthly performance reports, budget analyses, and forecasts for management review.- Manage supplier relationships, negotiate contracts, and ensure timely procurement of inventory.- Monitor stock levels, minimize wastage, and optimize resource utilization.- Supervise planning and execution of banquets, corporate events, and private functions.- Coordinate with the Sales & Marketing team to promote F&B services for events and special occasions.- Work closely with the marketing team to design F&B promotions, theme nights, and seasonal offers.- Ensure that all outlets reflect the Mayflower Hotels brand identity through dcor, ambiance, and service presentation.
