Keeps track of operational costs for kitchen. Supervises all kitchen areas to ensure a consistent, high quality product is produced Responsible for guiding and developing staff. Must ensure sanitation and food standards are achieved. CANDIDATE PROFILE Education and Experience 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major; 5 years experience as a Head Chef. 5 years experience as a sous chef in high end restaurants or abroad. Practical knowledge of various computer programs (MS Office, restaurant management software, POS)CORE WORK ACTIVITIES Ensuring Culinary Standards and Responsibilities are Met Prepares and cooks food based on menus and can implement special requests as needed and approved. Reviews and adjust systems and procedures in the kitchen to ensure their effectiveness. Can develops, designs, or creates new menus and recipes based on standards or artistic contributions. Highly knowledgeable in the areas of: o High quality food productso Food presentations o Flavour Ensures compliance with food handling and sanitation standards. Ensures compliance with all applicable laws and regulations. Follows proper handling and right temperature of all food products. Ensures a safe working environment inside the kitchen.
