Job Summary
The Commi III – Line Cook supports daily kitchen operations by assisting in food preparation, maintaining hygiene and safety standards, and strictly following recipes and SOPs. The role focuses on ensuring food quality, consistency, and operational efficiency while supporting senior kitchen staff.
Key Responsibilities
Assist in food preparation tasks such as cutting, chopping, marination, and portioning as per defined SOPs
Ensure proper mise-en-place and station readiness before and after shifts
Follow standardized recipes, portion sizes, and FIFO (First In, First Out) storage practices
Maintain hygiene and food safety standards in compliance with FSSAI & FSMS guidelines
Clean and sanitize workstations, utensils, and kitchen equipment regularly
Support senior kitchen staff during peak production hours
Maintain preparation logs, proper labeling, and material/stock records
Coordinate with packaging and delivery teams to ensure timely dispatch
Attend training sessions, daily briefings, and skill development programs

Recipe adherence: ≥ 98%
Portion variance: ≤ 2%
Hygiene audit score: ≥ 90%
FIFO compliance: 100%
Attendance & punctuality: ≥ 95%
Required Skills & Competencies
Basic knowledge of food preparation techniques
Understanding of kitchen hygiene and food safety standards
Ability to follow instructions and SOPs accurately
Team player with a willingness to learn
Good time management and attention to detail
Education & Certification (Preferred)
Basic culinary training / F&B production course preferred
