Job Title: Commie 2
Key Responsibilities:
- Food Preparation: Assist in preparing ingredients and dishes as directed by the Chef de Parties or Sous Chef. This may include cutting, chopping, and preparing stocks, sauces, and components for dishes.
- Cooking Assistance: Support senior kitchen staff during service, including assisting with cooking and plating dishes. The Commie 2 is expected to have a higher level of competence in handling kitchen tasks than a Commie 1.
- Maintaining Kitchen Standards: Ensure that all food is prepared to the restaurant-s specifications, ensuring consistency in flavor, quality, and presentation.
- Station Management: Often given responsibility for managing a specific section or station in the kitchen (., vegetable prep, grill, or pastry), under the supervision of a Chef de Parties or Sous Chef.
- Inventory and Stock Control: Help maintain stock levels, ensure proper storage, and assist with stock rotation to avoid wastage.
- Health & Safety Compliance: Follow all food safety regulations, such as proper hygiene practices, temperature control, and cleanliness.
- Assisting with Training: Support less experienced kitchen staff.
- Cleaning and Organizing: Ensure that workstations are kept clean and organized, maintaining the high hygiene standards required in a professional kitchen.
