The ideal candidate will possess deep expertise in microbiology, fermentation technology, and probiotic strain viability to drive new product development (NPD) from bench scale to commercial production.Key ResponsibilitiesProduct Formulation & Strain DevelopmentDesign, formulate, and optimize probiotic strains and synbiotic blends (powders, capsules, sachets, liquid suspensions, or functional foods/beverages).Conduct strain compatibility, matrix interaction, and excipient feasibility studies to ensure maximum CFU (Colony Forming Unit) viability throughout product shelf life.Evaluate and select microencapsulation, spray-drying, or freeze-drying techniques to improve strain stability against stomach acid and heat.Bench-Scale Experimentation & Process OptimizationExecute bench-scale fermentation, culture media optimization, and downstream processing (centrifugation, filtration, lyophilization).Conduct real-time and accelerated stability studies under varied temperature and humidity conditions according to ICH/FSSAI guidelines.Troubleshoot formulation challenges such as moisture sensitivity, viability drops, and organoleptic properties.Analytical & Microbiological TestingPerform routine analytical assays including CFU counting, purity testing, strain identification, contamination profiling, and moisture analysis (Karl Fischer / Loss on Drying).Maintain strict adherence to GLP (Good Laboratory Practices) and document all experimental setups, observation logs, and laboratory notebooks accurately.Scale-Up & Regulatory ComplianceSupport technology transfer (TT) from R&D laboratory scale to pilot plant and commercial manufacturing facilities.Prepare comprehensive technical dossiers, Standard Operating Procedures (SOPs), batch manufacturing records (BMRs), and specification sheets for new formulations.Ensure all formulations comply with FSSAI, AYUSH, or relevant regulatory bodies for probiotics and dietary supplements.

Key Responsibilities of R&D ExecutiveEnzyme Screening & Strain Improvement: Isolate, screen, and characterize microbial strains (fungal/bacterial) for high-yield enzyme production; conduct classical mutagenesis or recombinant strain evaluation.Fermentation & Process Optimization: Execute laboratory and bench-scale fermentation (Shake Flask & Bioreactor / Fermenter up to 5L-10L) to optimize growth parameters, media formulations, and yield metrics for target enzymes.Downstream Processing (DSP): Perform basic downstream purification techniques including cell disruption, filtration, precipitation, ultrafiltration, and chromatography to isolate active enzyme proteins.Enzyme Characterization & Assays: Develop, validate, and perform enzymatic assays to determine enzyme activity, kinetic parameters ($K_m$, $V_max$), temperature/pH stability profiles, and substrate specificity.Application Testing: Evaluate enzyme performance under simulated commercial conditions for target industries (e.g., starch hydrolysis, baking, brewing, textile desizing, or protein hydrolysis).Scale-Up & Technology Transfer: Prepare Standard Operating Procedures (SOPs), Technology Transfer Dossiers (TTD), and coordinate with Pilot Plant / Production teams during process scale-up.Documentation & Safety: Maintain accurate laboratory notebooks, record experimental data in compliance with Good Laboratory Practices (GLP), and ensure safe handling of biological agents and hazardous chemicals.
