Job Description

-Purpose :

Plan And Manage The Kitchen Staff In The Procurement, Production, Preparation And Presentation Of All Food For The Hotel In A Safe, Sanitary Work Environment Which Conforms To All Standards And Regulations And Achieves Profitable, Competitive, Quality Products And Also To Provide An Efficient And Cost Effective Food Service To The Establishment.

-Deliverables :

- Check The Production Plan For The Day In The Department And Keep The Executive Chef Informed.

- Make Duty Rosters For The Outlets Keeping In Mind Work Loads And Peak Hours. Comply With The Standard Recipes Framed By The Executive Chef.

- Check The Quality, Service Standard And Presentation Of All Food Leaving The Kitchen.

- Ensure That All Equipment Are Handled Correctly And Maintained Well.

- Conduct Departmental Training Sessions.

- Use Imagination And Creativity On The Job.

- Be Aware Of The Food Adulteration Act And Health Act.

- Maintain Food Cost At Optimum Levels.

- Posses Thorough Work Knowledge Of The Concerned Department.

- Organise The Daily Work Schedule And Ensure Instructions Are Being Followed.

- Be Flexible To Guest Comments And Have A Positive Approach Towards Solving Guest Complaints.

- Attend All Staff Training And Meetings As And When Directed By The Executive Chef.

- Report Any Health Or Safety Hazards To His Superiors.

- To Ensure That All Duties Are Carried Out In Line With The Hotel Policy With High Standards Of Personal Appearance, Personal Hygiene, Correct Uniforms And Name Badges As Outlined In The Staff Handbook.

- Through The Kitchen Stewarding And Engineering To Ensure All Equipment In The Production Areas Are In Good Working Condition.

- To Co-Ordinate Through The Human Resources Department Regular Health Check Up Of The Staff In His Department.

- To Carry Out Any Other Duties Pertaining To The Department As Assigned On A Daily Basis By The Management.
